Recipes

I wanted to share some recipes that have been passed down to my family, or recipes that we have tried and liked.  Hope you enjoy. Please feel free to post recipes to share in the comments.

APPLE PIE
Preheat Oven to 400*
2lbs of apples, peeled cored, and sliced. (About 5 medium apples)
2 tsp's lemon juice
3/4 cup sugar
1/4 - 1/2 tsp ground nutmeg (depending on how much you like)
1/2-1 tsp ground cinnamon (once again depending on how much you like)
3 tbls flour
2 tbls butter (To be added later)

 Line pie plate with crust, poke air holes in crust with fork. Combine all above ingredients except the butter. Mix, and spoon ingredients into crust, dot with butter. Roll out pastry, and vent (cut out shapes, we use star shaped cookie cutters) flute edges (pinch with two fingers and thumb to give the pie crust look) Cover edges with foil to prevent burning. Bake for 50 minutes. Cool and serve!

   BANANA WAFER PUDDING
2 boxes of instant vanilla or banana pudding (your taste preference)
2 cups of milk per box of pudding (4 cups for 2 boxes)
box of vanilla wafers
bananas

Line bowl with vanilla wafers, and bananas, top with pudding. Keep adding layers of vanilla wafers, bananas, and pudding until you are out of pudding.
Optional: Crumbs (crush and sprinkle vanilla wafers as a topping. We do this with a ziploc bag and a rolling pin)
or also optional: meringue: 6-8 egg whites, 1/4 cup sugar. Mix and top. Brown in broiler (WATCH CAREFULLY VERY EASY TO BURN) Chill in fridge 2-4 hours and serve cold

 MONKEY BREAD
Preheat oven to 350*
2 cans of biscuits
3/4 cup butter
1/2 cup sugar
1 tsp cinnamon
1 cup brown sugar

Cut biscuits into 4 pieces. Mix sugar and cinnamon in a ziploc bag. Place biscuits in bag and shake to coat. Layer pieces in a sprayed (PAM baking) bunt pan. Melt butter, and mix with brown sugar. Mix until smooth, pour mixture on top of biscuits. Bake for 30 minutes. Cool and serve.

Hawaiian Chicken

1 can sliced pineapples drained (for later use)
8 Chicken Breasts
1 1/2 cup soy sauce low salt
1/2 cup cooking sherry
1 64 fl oz can pineapple juice 
1 1/4 cup wine vinegar
1 1/3 cup brown sugar
1 tsp garlic powder
Marinate 24 hours if meat is thawed. 48 hours if meat is frozen. Broil 10-12 minutes on each side, or grill. Last 3-5 minutes place pineapples on. Done when meat reaches 180 degrees on meat thermometer.

Cheesy Ranch Potatoes

Preheat Oven to 350*
2 lbs potatoes, peeled and sliced
2 tbls water
1 lb shredded cheese
1/2 cup butter
ranch
Line a 9x13 inch baking pan with foil. Place potatoes and water in baking dish and cover with foil. Bake 1 hour. Add butter, sprinkle cheese over potatoes. Reseal and bake 30 minutes until potatoes are tender and cheese is bubbly. Top with ranch and serve.

Chicken Broccoli Skillet Dinner

Makes 4 servings
1lb chicken breast cubed
1/2 cup miracle whip
1/2 cup processed cheese- Velveeta
1 Package frozen broccoli- thawed and drained
In a large skillet cook chicken breast with miracle whip on medium heat. 6-8 minutes or until cooked through. Stir in broccoli and Velveeta. Cook for 2 minutes or until heated through. Serve over Spanish rice or chicken rice.
